Man Shall Not Live by Bread Alone…

…but God forbid that man have to do without biscuits!

I am not much of a bread eater. Do not even come near me with a piece of regular sliced loaf bread because I will not be eating it. Regardless of it being wheat, white, pumpernickel, sourdough…it does not matter. There is something about that type of bread that does not sit well with me. I have not had such bread in probably ten years or more, and I always have to mentally process the statement “the best thing since sliced bread” in my head each time someone uses it. I have to tell myself, it is the slicing that is important, and not the bread.

My relationship with bread, then, comes down to the fairly infrequent consumption of crackers, cornbread, wraps, pancakes, pizza crusts, the even more infrequent infrequent hamburger bun (never white), and my one true bread weakness–biscuits. Most biscuits use shortening, so I could not have picked a less healthy bread to love, right?

In my lifetime, I have made several batches of homemade biscuits, and I have always found it to be too much of a task, even for the yummy goodness that comes out of the task. As a result, in more recent years, I have resorted to using Bisquick to make quick biscuits or to simply waiting for my mother to make me some biscuits. The latter only happens a few times a year, and my mother, unfortunately still uses hydrogenated shortening.

In the past few months, I have also committed to stopping use of Bisquick, which, despite its general acceptance as a vegan product, still apparently uses hydrogenated oils and has trans fat, as well. Suffice it to say, I have not had biscuits in quite a while.

Between bouts of intense paper grading, with Café World breaks on Facebook in between, I searched the web for easy vegan biscuit recipes yesterday. I came across a cranberry-cornmeal biscuit recipe that looked really easy, and that I am eager to try. Alas, I have everything but the cranberries. I will have to save that one for later.

However, I did find one easy biscuit recipe in my search to try, and, instead of going to sleep to rest my very tired, paper-grading eyes, I started making a batch of biscuits around midnight. I wanted to be able to get up, heat them, and eat them.

This biscuit recipe is by far the simplest one that I have ever made in my life. I could have quickly and easily made the biscuits this morning. Of course, I made some changes and substitutions based on what I had on hand, but the biscuits still came out great. Now I just need to get my hands on some cranberries, or maybe even some cherries. Yum!
